you will need:
4 boneless, skinless chicken breasts
1 egg
2 tablespoons Dijon styled mustard, divided
1/2 cup garlic and herb seasoned bread crumbs
1/4 cup flour
2 tablespoons half and half
1/2 teaspoon sugar
1 1/2 tablespoons chopped fresh parsley
preparation:
preheat oven to 400 F.
spray a 9x13-inch baking pan with nonstick cooking spray.
in shallow bowl or pie plate, blend egg and 1 tablespoon mustard.
place flour in a reclosable plastic bag.
place bread crumbs in second bag.
place chicken in flour, shake to coat.
dip chicken in egg mixture.
place in bread crumbs and shake to coat.
place chicken in baking pan.
spray chicken lightly with cooking spray.
cook:
bake chicken at 400 F 18 to 20 minutes or until interal juices run clear.
meanwhile, in small bowl, blend remaining mustard, half and half, and sugar.
serve:
drizzle mustard sauce over chicken and top with parsley.
