Americanized Sheppard's Pie

by Americanized, I mean that authentic Sheppard's Pie calls for sausage or mutton or some such. hell, I don't know. I'm not from England. wink.gif

I know this looks like a mish mash of ingrediants...because it is. I was a tad leary myself trying it (I despise tomato soup) but I tried it anyway because it seemed like a good, hearty meal. and it was.

the only deviation I made to the recipe was using a tub of mashed potatoes instead of the "4 potatoes"....let's face it, I can be pretty damn lazy. who wants to peel, boil, and mash potatoes if they don't have to? but it worked, and it was good.

you will need:
4 potatoes
1lb lean ground beef
1 onion, chopped
2 (10.75 oz) cans condensed tomato soup
1 (15 oz can green beans, drained
1 cup shredded cheddar cheese

preparation:
preheat oven to 350 F
bring a large pot of salted water to boil
peel and quater potatoes and add to boiling water
cook until tender, about 15 minutes
drain, mash, and set aside

in a large skillet over medium heat, cook beef and onion until beef is browned, drain
stir in tomato soup and green beans
pour into a 9x13 baking dish
mound mashed potatoes in a ring around the meat mixture
sprinkle potatoes with shredded cheese

cook:
bake in preheated oven 30 minutes, until potatoes are golden

serve:
serve with a side salad and fresh rolls...or just by itself! it's all good.
