Country Steak and Gravy

making dinner last night was an adventure, to say the least. I had a terrible case of the dropsies. went to swirl the pan to coat the oil one last time before adding my steaks...and promptly spilled half of the HOT OIL right onto my kitchen floor. and also? I dropped the pan of potatoes and lost a third. methinks I need to mop my poor floor tonight when I get home.

but dispite my mishaps, this turned out delicious. I've always been intimidated by pan gravy, but I done did a good job this time. the only thing I screwed up is I didn't have the oil hot enough when I added my steaks (to sear them...see the point about spillage above) so they came out a tad greasy...but the gravy was HEAVEN.

you will need:
4 cubed steaks
1 cup flour
1/4 tsp salt
1/4 tsp pepper
1 1/2 cups milk
oil

preparation:
place enough oil in pan to coat the bottom
heat on medium heat
place 1 cup flour, salt and pepper in a shallow bowl and stir
dip each cube steak in flour on both sides (press to coat well)
reserve 1/4 cup flour from mixture

cook:
place each steak in heated oil and cook until browned on both sides and cooked through
remove steak to a plate and cover with foil to keep hot
add 1/4 cup of flour to oil, salt and pepper to taste
stir over medium heat until flour is browned
slowly pour in milk, stirring constantly
continuing stirring over low heat with a wire wisk until smooth and thickened

serve:
serve gravy over steak with sides of mashed potatoes and green beans
