this was the most fun I've had cooking in a long time. a co-worker gave me this recipe. and by gave, I mean she gave me a list of ingrediants and I had to figure out measurements. LOL my end result didn't taste quite as good as hers, but still...I'm proud of how it turned out. so here's what I came what with, adjust if you wish.
you will need:
1 1/2 lb lean ground hamburger
1 small white onion, diced
1 (4 ounce) can of green chilis
1/2 cup taco sauce
1 (14 ounce) can of enchilada sauce, divided
10 corn tortillas
8 ounces Velveeta cheese, halved
preparation:
brown hamburger meat and diced onions on medium high heat, drain
add chilis, 1/2 cup taco sauce, 1/2 cup enchilada sauce, 1/2 of cheese (cubed)
cook on medium heat until cheese is melted and mixture is blended
heat tortillas according to package
in a 9x13 pan, pour enough of remaining enchilada sauce to coat bottom
place a large spoonful of meat mixture on each tortilla, roll and place in pan
pour remaining enchilada sauce over the rolled tortillas
top with remaining meat mixture, spread
slice remaining cheese, place a slice on each rolled tortilla
cook:
cook at 375 degrees for 15 minutes or until cheese is bubbly and browned
serve:
place on a plate and eat em up! no, seriously. you can serve with a side of sour cream or more taco sauce, whatever floats your boat.
